Feta and watermelon: freshness, flavour and creativity

Watermelon is not just a fruit to serve at the end of a meal; it can also become the star ingredient of a dish. In this case, only two ingredients are needed: sweet, crunchy watermelon and salty, crumbly feta cheese. Then simply finish everything with a good olive oil — and we recommend our basil-infused extra virgin olive oil for the perfect final touch from our olive mill — together with a few rings of Tropea red onion and a few fresh basil leaves.
You can serve feta and watermelon on a serving platter or in a bowl. However, if you have a little extra time and creativity, the most striking presentation is to serve the dish inside the watermelon itself — perhaps using a small baby watermelon carefully carved for the occasion. It will certainly leave an impression on your guests.
Feta and watermelon: how to prepare it

Serves: 4
Ingredients
- 700 g chilled watermelon, rind removed
- 280 g feta cheese
- 20 g fresh basil leaves
- ½ Tropea red onion
- Basil-infused dressing from our olive mill, Azienda Cericola
Instructions
- Cut the watermelon into pieces, or break it into irregular chunks with your hands.
- Dice the feta and add it to the watermelon in a bowl together with the onion sliced into rings and the basil leaves.
- Finish with a generous drizzle of olive oil and serve.
