A tomato puree is born with a bright red color, a sweet flavor and a creamy and velvety consistency. It is ideal for the preparation of first courses, sauces and pizzas, recipes based on eggs and white meats.
The ingredients used are only tomato and salt.

INGREDIENTS
- Extra virgin olive oil;
- 1 onion;
- Fresh basil;
- 1.5 liters of tomato pulp;
- water, salt to taste;
- 2 bay leaves;
- 10 thin horse chops;
- Parsley;
- Salt;
- Grated pecorino cheese to taste;
- Chopped garlic;
- Chili pepper (or pepper)
STEP
- Prepare the horse chops:
- Lay out the horse slices well on a work surface;
- Season with salt, chili pepper, parsley, chopped garlic and grated cheese;
- Roll each slice to form the chops and close with toothpicks;
- Fry the chopped onion in oil in a high-sided pan, when it is golden, add the chops and brown for a few minutes;
- Then add the tomato puree, the two bay leaves, a few ladles of warm water and season with salt;
- Cover with the lid and cook for about an hour on medium heat, stirring occasionally;
- A few minutes before the end, add the fresh basil leaves;
- Serve hot!! A truly sublime preparation… enjoy your meal!
