Peranzana is the 100% Italian Pitted Extra Virgin Olive Oil cold-extract with olives with the same-name, only collected in our fields. This mono-variety oil, presents a strong personality and it is distinctive of the territory where Oleificio Cericola is based. Tavoliere Lands can enjoy, indeed, of this ancient species of olive tree which, according to the legend, had been introduces from France around year 1300 by the Angevin.
Peranzana is obtained from olives collected from our fields through cold-extraction. Prior to extraction, olives are deprived of much of the pit thanks of innovative pit-removal Moliden-Leone, a system invented by family Leone. This processing stage allows to obtain an oil with almost 100% of pulp of the fruit. The type of the process, joined with variety, help in obtaining an medium-fruity extra virgin oil.
Thanks to the cold processing, Oleificio Cericola produces an hight quality extra virgin where tones kind and firm dominate. Simplicity is essential to appreciate the most its smooth taste. On a slice of warm bread or as a salad dressing, pitted oil emanates a fruity taste.
