What is a pitted oil?

It is called pitted, that type of extra virgin olive obtained with immediate and prior separation of the fruit-stones from the pulp of the olive. That very process is accomplished thanks to the use of the innovative pit removal Moliden-Leone. This machine was designed by Pietro Leone who has pa-tented along with his sons Luigi and Michele a new press system. Upstream of the production pro-cess, this step allows to have at the same time olive pressing and extraction of fruit-stones, from the start ready to be used as fuel in heaters and pellet stoves. The product resulting form the process has a soft taste.

High quality oil

Thanks to the cold processing, Oleificio Cericola produces an hight quality extra virgin where kind and firm tones dominate. Simplicity is essential to appreciate its smooth taste the most. On a slice of warm bread or as a salad dressing, pitted oil emanates a fruity taste.
